Founded by Corey Milligan in Jackson Hole, New West has spent years building a reputation among Michelin-starred chefs, collectors, and serious home cooks who care as much about craftsmanship as performance. Its gallery-style store in St. Helena feels entirely at home in Napa Valley, where conversations about food and wine tend to begin with the tools, ingredients, and the hands behind them.

Milligan arrived at knifemaking through the kitchen rather than the workshop, and that perspective still shapes the company’s philosophy. “Our mission is to make the finest knives in the world,” he says. “I started out as a line cook, and that informs how we make our knives, which means, like with cooking, we start with the finest ingredients.” The finished product performs with surgical precision while carrying the visual presence of sculpture, equally suited to a professional prep station or a collector’s display.

What distinguishes New West is its insistence on hand craftsmanship at every stage of production. Much of modern manufacturing revolves around efficiency and reducing human contact. New West operates by another standard. “Our goal is the opposite,” Milligan explains. Every knife moves through the hands of a single maker from beginning to end. “It’s not an assembly line — one maker takes a knife from start to finish.” For Milligan, the tactile element remains essential. “We haven’t found a machine that can replace touch.”

That philosophy extends well beyond the kitchen. New West’s outdoor and everyday carry collection applies the same level of precision to campfires, rivers, and backcountry trails. “We’ve taken everything we’ve learned making the finest kitchen knives and applied it to outdoor and EDC knives,” says Milligan. Designing those tools required another layer of engineering and durability. The collection, inspired by the rugged terrain surrounding Jackson Hole, approaches outdoor life with the same seriousness New West brings to cooking: exceptional experiences deserve exceptional tools.

The brand’s Jackson Hole roots come into focus inside the MTN MAN Toy Shop, the immersive store-within-a-store concept anchoring the St. Helena location. One moment, visitors move through a gallery of polished culinary artistry; the next, they enter a world of axes, outdoor gear, and objects shaped by the mythology of the American West. “You pass through a gallery of culinary art into a Western outfitter’s dream,” Milligan says.

In the Napa Valley, New West Knife Works feels perfectly aligned with its surroundings.
