Shifting the Lens returns to the Bubble Room for another guest chef series
that showcases people, cuisines and flavors that have historically been
overlooked by traditional winery culinary and pairing programs. Starting the
series this year, Chef Tu David Phu brings a personal take on Vietnamese
cuisine inspired by his own cultural and experiential journey, presenting a fully
curated five-course tasting menu paired with small-lot sparkling and still wines
created by Winemaker Nicole Hitchcock. During both seating times, Chef Phu
will join diners in person to discuss his vision and inspiration for each dish.
Seating’s are offered at 11am & 2:30pm. $200 per person; $185 for Club J members; Luxe & Elegance members may apply their Bubble Room benefits to Shifting the Lens events.. An Emmy Award nominee, Top Chef contestant, James Beard Award nominee
and a San Francisco Chronicle “Rising Star Chef,” Chef Phu has worked in the
kitchens of some of the nation’s top restaurants, including Daniel in New York
and Acquerello, a two-star Michelin spot in San Francisco.
Chef Phu sees food as a vessel for meaningful work. Inspired by the wisdom he
inherited from his mother through oral tradition, his involvement in food
recovery and regenerative practices are reflected in his dishes and his
advocacy. He was a co-executive producer for the Emmy-nominated film,
“Bloodline,” about his family, food prejudice and the evolution of his culinary
aesthetic.
As Chef Phu kicks off the second year of Shifting the Lens, he aims to connect
with guests on a personal, human and familial level — leaving guests with new
insights on the importance of representation and how it shapes our culture.
